Fluffy Yellow Cake
Mr. Wilt and I had a vocal ensemble practice last evening and I was to take dessert for the crowd. The following recipe is what I took…and the picture above is what we brought home. Needless to say, it was very well-received. ;o)
This is a wonderful, honest-to-goodness made from scratch yellow cake recipe. It is light and fluffy and just purely delicious.
Fluffy Yellow Cake
Ingredients:
1 c. butter or margarine
2 c. sugar
4 eggs, separated
3 c. flour
3 t. baking powder
¼ t. salt
1 c. milk
1 t. vanilla (I substituted almond extract)
Directions:
Separate egg whites from yolks. Beat egg whites until stiff (peaks form). Set aside. Cream butter and sugar well. Add egg yolks. Add dry ingredients to flour. Add flour and milk alternately. Add vanilla (or almond extract). Fold in egg whites. Pour into 3 greased and floured cake pans or 1 bundt. Bake at 350 degrees for 30 minutes (in 3 pans) or 45-50 minutes (in Bundt).
For the frosting, I used Anna’s wonderful chocolate frosting recipe from Pleasant View Schoolhouse. It is delectable. Click HERE to find the recipe. For an extra touch, I sprinkled the top with chocolate chips. Delicious!
